Ecological sustainability, productivity, and sensory quality of coffee fruits are important variables for coffee cultivation in agroforestry systems (AFSs). There is an appreciation of the ecological interactions between agricultural crops and native plants in the AFS. Coffea arabica L. is a shrub with geographic origins in the tropical forests of Africa. Thus, the production of coffee in AFSs can be an interesting alternative. In this study, we present the sensory and chemical profile of coffee grown in three AFSs in the Maciço do Baturité region, Ceará, Brazil and submitted to five types of post-harvest processing. This region has been producing arabica coffee for more than 200 years under forest conditions similar to the ecological characteristics of the geographical center of coffee with shadows produced by native plant species. The coffee fruits were obtained from an AFS with coffee cultivated in the natural/wild system, an AFS in conversion to syntropic, and a conventional AFS. The syntropic AFS and the natural/wild AFS had the highest sensory scores. With the exception of conventional AFS, spontaneous fermentations in covered terrain had higher total scores than fermentations carried out in sealed polyethylene containers. In the sensory panel, the body attribute contributed to the sensory discrimination of fermentation processes by wet and dry methods. Lipids, caffeine, carboxylic acids, and chlorogenic acids were responsible for the chemical differentiation of AFSs Therefore, AFSs and fermentation processes influence the chemical and sensory quality of coffee beans. Os agroecossistemas agrícolas fazem a substituição da diversidade natural de um local por uma quantidade pequena de espécies de plantas, cultivadas em áreas extensas. Isso caracteriza os monocultivos, que visa produção em escala e em grandes quantidades, por meio da utilização de fertilizantes inorgânicos, irrigação e material genético de alto rendimento para explorar a capacidade máxima de produção, surgindo, assim os surtos populacionais de insetos. O manejo agroecológico de pragas busca promover o equilíbrio do sistema, reduzindo a população de insetos praga e aumentando a população de insetos benéficos. No entanto, ainda existe a possibilidade de surgimento de populações de pragas. Para estes casos, há necessidade de adoção de métodos de controle. Este trabalho buscou abordar os princípios do manejo de pragas nos sistemas agroecológico, bem como introduzir ao leitor os métodos de controle biológico de pragas aplicado e/ou métodos alternativos de controle de pragas dentro dos princípios do manejo integrado de pragas.
Agricultural agroecosystems replace the natural diversity of a site with a small amount of plant species, grown in extensive areas. This characterizes monocultures, which aims at large-scale and large-scale production, through the use of inorganic fertilizers, irrigation and high yield genetic material to exploit the maximum production capacity, thus resulting in population outbreaks of insects. The agroecological management of pests seeks to promote the balance of the system, reducing the population of insect pest and increasing the population of beneficial insects. However, there is still the possibility of emergence of pest populations. For these cases, it is necessary to adopt control methods. This work sought to address the principles of pest management in agroecological systems, as well as to introduce to the reader the methods of applied biological pest control and/or alternative methods of pest control within the principles of integrated pest management.
