Conilon coffee represents almost 20% of all coffee production in the Brazilian territory; however, it is inexpressive in relation to the sensory quality when compared to Arabica coffee. It is noteworthy that the coffee from the species Coffea canephora PIERRE has a denser sensorial profile, is less sweet, less acidic and with strong pronunciation of the body at the time of tasting. This study has unprecedentedly applied the use of starter cultures (yeast) to optimize and modify the metabolic pathways and consequently the sensorial quality perceived by Q-graders. The experiments were conducted in a randomized block design with five replicates, in the 3 × 4 factorial scheme, with three fermentation times?24, 48 and 72 hours and four wet processing tests?Washed, Yeast fermentation, Fully washed without yeast and Fully washed with yeast.
The sensorial results indicate a new perspective for the application of wet processing with starter cultures for Conilon coffee. They indicate gains in sensory scale, opening a new phase of studies on spontaneous and induced fermentation for Conilon coffee in Brazil and worldwide |

Destaque nacional na produção de café conilon, o Espírito Santo tem papel importante na cafeicultura do país. Nos últimos anos, variáveis climáticas, principalmente períodos de secas vêm comprometendo a produção de café conilon no Estado, resultando em perdas significativas na produção, além de comprometer diversos seguimentos desde pequenos agricultores até a indústria cafeeira. Localizado na região predominantemente produtora de café conilon no Estado, o município de Marilândia, possui condições de restrição hídrica que em situações adversas podem afetar a produção. O objetivo deste trabalho foi analisar a distribuição mensal da deficiência hídrica, nos anos de 2015 a 2016 em Marilândia, associada a produção de café conilon na região.
National highlight in the production of conilon coffee, Espírito Santo has an important role in coffee growing in the country. In recent years, climatic variables, especially periods of drought committed the conilon coffee production in the state, resulting in losses in production, as well as compromising various segments from small farmers to the coffee industry. Located in a region that is predominantly productive of coffee conilon state, the municipal of Marilândia, has restriction conditions of the water that that in adverse situations can affect the production. The objective of this work is to analyze the monthly water distribution in Marilândia, from 2015 to 2016, associated with a production of conilon coffee in the region. |
