The sensory profile from the Coffea canephora stands out for being denser, less sweet, presenting less acidity, and having characteristics of a marked aroma of roasted cereals. Coffee is essentially a terroir product, that is, directly influenced by environmental aspects, both natural and anthropic, in this sense, it has been argued that Coffea canephora is linked to the context of inferior coffees in sensory terms by the terroir conditions. This study aimed to characterize and investigate the terroir in different areas of Conilon coffee production, with the application of different fermentation methods, and to observe their possible gains and losses in the sensory quality of Coffea canephora. Cherry coffee samples were collected in six municipalities in the state of Espírito Santo, Brazil, which has an altitude variation from 376 m to 866 m. The study showed that the local characteristics of altitude and temperature directly influence the sensory quality, as well as demonstrated that natural fermentation in a specific altitude zone delivered good results, fixing the terroir factor. Finally, it was demonstrated that induced fermentation helps to improve sensory quality for higher altitude areas, indicating the possibility of reformulating the terroir of Conilon coffee production. |

O café, principal produto agrícola capixaba, é cultivado, no que se refere à espécie arábica, quase que exclusivamente nas regiões altas do Estado, acima de 500m de altitude, e em áreas de encostas íngremes. A utilização dessas áreas, sem o uso de práticas conservacionistas adequadas, tem causado acentuada erosão nos solos, levando à sua degradação, com conseqüente queda da produtividade e longevidade do cafeeiro. Este projeto teve com finalidade principal, indicar práticas vegetativas eficientes e
adequadas na conservação e recuperação dos solos em sistema de produção de café arábica. Houve redução na perda de solo à medida que aumentou o número de faixas de capim meloso. Após quatro anos de implantação do experimento, o próprio crescimento e fechamento das plantas impediu a perda de solo pela erosão. Na média de nove colheitas os melhores rendimentos foram para os tratamentos: 1:3/0,5-uma faixa de meloso para cada três ruas de café capinada da linha de plantio até 0,5m a partir da projeção da copa; 1:2/0,5-uma faixa de meloso para cada duas ruas de café capinada de linha de plantio até 0,5m a partir da projeção da copa; e 1:2/projeção- uma faixa de meloso para cada duas ruas de café capinada da linha de plantio até a projeção da copa.
Coffee, the principal capixaba agricultural crop, is cultivated, in what referes to arabica species, almost exclusively in the high regions of the state, above the altitude of 500m, and in areas with steep slopes. The use of these areas without using adequate conservation practices has caused accentuated soil erosion, leading to its degradation, with consequent decrease of productivity and longevity of the coffee fields. The final results of this project indicate efficient and adequate practies for the recuperation and
coservation of soils in a arabica coffee production system. There was a reduction in loss of soil as the number of strips of meloso grass increased. Four years after the introduction of the experiment, the growth and closure of the plants impeded loss of soil by erosion. In an average of nine harvests, the best yields were the ones that received treatments: 1:3/0,5- one strip of meloso for each three rows of coffee with hoeing in the line of planting until 0,5m from the projection of the canopy. 1:2/0,5- one strip of meloso for each two rows of coffee with hoeing in the line of planting until 0,5m from the projection of the canopy. And 1:2/projection- one strip of meloso for each two rows of coffee with hoeing in the line of planting until the projection of the canopy.
