O objetivo do trabalho foi avaliar a composição química, as características sensoriais, e as atividades antioxidante e quimiopreventiva de câncer de grãos verdes de clones elites de café conilon selecionados no programa de pesquisa de melhoramento genético de café conilon do Instituto Capixaba
Pesquisa, Assistência Técnica, Extensão Rural (Incaper) coletados com diferentes épocas de maturação (precoce, intermediária e tardia), bem como comparar os resultados obtidos com as amostras de café Robusta Tropical, e café arábica Catuaí ?81?. As amostras foram coletadas nas fazendas
experimentais do INCAPER, sendo nove clones de café (genótipos Diamante ES8112, clones C101, C105 e C108; ES8122 - Jequitibá clones C201, C205, C207; Centenária ES8132 clones C303, C304, C306); uma amostra de ?Robusta Tropical?, e uma de arábica Catuaí 81. A colheita destas amostras foi realizada em três estádios diferentes de maturação (60, 80 e 100% de grãos cereja) |
