O café é uma das bebidas mais consumidas em todo o mundo, onde diariamente milhares de pessoas apreciam suas diversas características. Grande parte dos fatores determinantes da qualidade está associada aos processos de colheita, processamento, secagem e armazenamento e influenciam diretamente a qualidade final no momento da prova de xícara. Desta forma, a complexidade de avaliação de atributos qualitativos é uma tarefa que deve ser realizada por julgadores treinados. No Brasil, a prova de xícara é tida como a referência para determinação da qualidade sensorial do café. Geralmente este processo está a cargo de provadores profissionais que possuem experiência para de avaliação de cafés. Os concursos de cafés especiais refletem o zelo da produção de qualidade e é neste momento que os produtores são postos a prova, quando suas amostras são avaliadas por referees, a fim de se determinar quais são os melhores cafés ao final de cada safra. Este estudo teve como objetivo avaliar o efeito da interação entre provadores durante um concurso de cafés especiais, principalmente observando se a conversação entre eles exerce influência na avaliação sensorial. Para realização do estudo foram utilizadas 20 amostras participantes da etapa final de um concurso de cafés especiais na região Serrana do Estado de Espírito Santo. O estudo foi conduzido com quatro provadores com experiência em análise sensorial de café, que provaram as amostras no primeiro dia e no segundo dia, respectivamente, sem e com interação entre eles. Os resultados indicam que a interação entre os provadores influenciam significativamente as avaliações e que as interações geram ruídos sobre os resultados, demonstrando que o protocolo de provas da SCAA deve ser seguido rigorosamente, a fim de se evitar equívocos/distorções nos procedimentos de análise sensorial.
Coffee is one of the most consumed beverages in the world, thousands of people enjoy its various characteristics daily. It is known that most of the factors that determine the quality are associated with procedures for collection, processing, drying and storage and these factors directly reflect the final status when cup test. Thus, the complexity of evaluation of qualitative attribute is a task that must be performed by trained panelists. In Brazil, proof cup is taken as the reference for determining the sensory quality of coffee. Normally this process is the responsibility of the professionals tasters who have experience to carry out coffee evaluation. The specialty coffee competitions reflect the attention given to quality production and at this time the producers are evaluated when their samples are assessed by referees, in order to determine which are the best coffees at the end of each crop season. So, the objective of this study was to evaluate the effect of interaction between panelists during a specialty coffee competition, and verifyingif the conversation between them influences the sensory evaluation. For this study we used 20 samples of the final stage of a specialty coffee competition in the mountainous region of the State of Espírito Santo. This study was conducted with four panelists with expertise in sensory analysis of coffee, whom proved the samples in the first day and second day, respectively, without and with conversation between them. The results indicate that the interaction between the panelists have statistical significance on the sensorial evaluation and generate noise on the results, showing that the testing protocol SCAA should be rigorously conducted in order to avoid misunderstandings in sensory analysis. The effects of water deficit on photochemical parameters and expression of several candidate genes were investigated in drought-tolerant clone 73 of Coffea canephora submitted to slowly imposed water limitation. Under irrigation, this clone showed low values of stomatal conductance (g s ) and of CO2 assimilation rates (A) suggesting that it had a great efficiency in controlling stomatal closure and transpiration. After water withdrawal, this clone reached a ?3.0 MPa after 15 days without irrigation and showed a slow decrease in the pre-dawn leaf water potential. Under drought, the suppression of A was accompanied by maintenance of photochemical quenching (q P) and internal to ambient CO2 concentration (Ci/Ca) ratios as well as by a decrease of non-photochemical quenching (q N). This is confirmed by the transport rate/CO2 assimilation (ETR/A) rates that suggested the participation of an alternative electron sink protecting the photosynthetic apparatus against photoinhibition. At the transcriptomic level, high up-regulation of genes encoding for a dehydrin (CcDH3), an ascorbate peroxidase (CcAPX1), a prephenate-dehydrogenase like protein (CcPDH1) and a non-symbiotic haemoglobin (CcNSH1) was also observed upon drought suggesting a strong induction of antioxidant and osmoprotection systems in this clone. High expression levels of gene-encoding ABA receptors (CcPYL3 and CcPYL7) under water limitation were also observed suggesting the involvement of the ABA signaling pathway in response to drought. All these results where compared to those previously obtained for drought-tolerant clones 14 and 120. Our results demonstrated the existence of different mechanisms amongst the drought-tolerant coffee clones regarding water deficit.
