Coffee is one of the most consumed beverages worldwide. EspÃÂÂÂrito Santo is the largest Brazilian producer of conilon coffee, and invested in the creation of new cultivars, such as ?Conquista ES8152?, launched in 2019. Therefore, the present study aimed to evaluate the effects of maturation and roasting on the chemical and sensorial composition of the new conilon coffee cultivar ?Conquista ES8152?. The coffee was harvested containing 3 different percentages of ripe fruits: 60%, 80%, and 100%, and roasted at 3 different degrees of roasting: light, medium, and dark, to evaluate the moisture and ash content, yield of soluble extract, volatile compound profile, chlorogenic acid and caffeine content, and sensory profile. ?Conquista ES8152? coffee has a moisture content between 1.38 and 2.62%; ash between 4.34 and 4.72%; and yield between 30.7 and 35.8%. Sensory scores ranged between 75 and 80 and the majority of volatile compounds belong to the pyrazine, phenol, furan, and pyrrole groups. The content of total chlorogenic acids was drastically reduced by roasting, with values between 2.40 and 9.33%, with 3-caffeoylquinic acid being the majority. Caffeine was not influenced by either maturation or roasting, with values between 2.16 and 2.41%. The volatile compounds furfural, 5-methylfurfural, and 2-ethyl-5-methylpyrazine were positively correlated with the evaluated sensory attributes and 5-methylfurfural was the only one significantly correlated with all attributes. Ethylpyrazine, furfuryl acetate, 1-furfurylpyrrole, 4-ethyl-2-methoxyphenol, and difurfuryl ether were negatively correlated. The stripping did not affect the quality and composition of this new cultivar, however, the roasting caused changes in both the chemical and sensorial profiles, appropriately indicated by the principal component analysis.
O café é uma das bebidas mais consumidas em todo o mundo. O EspÃÂÂÂrito Santo é o maior produtor brasileiro de café conilon, e investiu na criação de novas cultivares, como a ?Conquista ES8152?, lançada em 2019. Portanto, o presente estudo teve como objetivo avaliar os efeitos da maturação e torra nas propriedades quÃÂÂÂmicas e sensoriais. composição da nova cultivar de café conilon ?Conquista ES8152?. O café foi colhido contendo 3 diferentes percentagens de frutos maduros: 60%, 80% e 100%, e torrado em 3 diferentes graus de torra: claro, médio e escuro, para avaliação do teor de umidade e cinzas, rendimento de extrato solúvel. , perfil de compostos voláteis, conteúdo de ácido clorogênico e cafeÃÂÂÂna e perfil sensorial. O café ?Conquista ES8152? apresenta teor de umidade entre 1,38 e 2,62%; cinzas entre 4,34 e 4,72%; e rendimento entre 30,7 e 35,8%. As pontuações sensoriais variaram entre 75 e 80 e a maioria dos compostos voláteis pertence aos grupos pirazina, fenol, furano e pirrol. O teor de ácidos clorogênicos totais foi drasticamente reduzido pela torra, com valores entre 2,40 e 9,33%, sendo o ácido 3-cafeoilquÃÂÂÂnico majoritário. A cafeÃÂÂÂna não foi influenciada nem pela maturação nem pela torra, com valores entre 2,16 e 2,41%. Os compostos voláteis furfural, 5-metilfurfural e 2-etil-5-metilpirazina correlacionaram-se positivamente com os atributos sensoriais avaliados e o 5-metilfurfural foi o único que se correlacionou significativamente com todos os atributos. A estimativa de divergência genética existente em uma coleção de germoplasma é importante não só para a conservação dos recursos genéticos, mas também para aplicações no melhoramento de plantas. O presente trabalho objetivou estudar a divergência genética entre 33 clones de Coffea canephora, utilizando-se marcadores RAPD. Os métodos de Tocher e UPGMA foram utilizados para agrupar os clones. Concluiu-se que os marcadores RAPD foram eficientes para detectar variabilidade genética entre os clones de Coffea canephora analisados. Os métodos de agrupamento de Tocher e UPGMA foram em parte concordantes e mostraram divergência genética entre os clones. Os 13 clones que compõem a variedade Conilon Vitória e os 10 constituintes da variedade Robustão Capixaba, recomendadas pelo Incaper, encontram-se em diferentes grupos dissimilares, apesar de possuírem características fenotípicas similares. Existem outros clones também divergentes que podem ser úteis ao programa de melhoramento. |
